Scrambling, archiving or destroying data in production system for data protection purposes

Hi,

Does anyone have any experience of scrambling, archiving or destroying data in a production system?  We need to scramble our leaver data older than 7 years but want to retain parts of the data for reporting purposes.

Any shared experience or guidance would be appreciated on any of the 3 approaches.

At the moment we are considering creating a custom program to scramble the sensitive data but this has a significant downstream effect on IT accounts so wondering what others have done.
